The story of Cibrèo began in 1979, when Florentine chef Fabio Picchi opened his restaurant and trattoria in the heart of Sant’Ambrogio, inspired by an ancient Florentine recipe. Since then, Cibrèo has become much more than just a restaurant: in 2003, the Teatro del Sale was born, a unique place that combines cuisine and theater in an atmosphere of conviviality and art. In 2017, Ciblèo made its debut, blending oriental flavors with Tuscan ingredients. In 2021, Cibrèo expanded its offering by managing the Food & Beverage at the Hotel Helvetia & Bristol, opening a new Parisian-style bistro café and a modern and cosmopolitan restaurant & cocktail bar. The group stands out for transforming food into culture and the table into a stage for stories and flavors, combining tradition and innovation with a constant focus on authenticity. The first restaurant opened by renowned chef Fabio Picchi in 1979 is a concentration of conviviality and refined composure of yesteryear. Traditional Tuscan and Italian dishes make seasonality and territoriality their distinctive features. “A combination of good things” is our statement and it was born here. A restaurant that is part of the history of Italian catering, iconic and timeless, with signature dishes famous all over the world.
